How to prepare :
Clean mussels thoroughly. Rinse shells under cold running water
Use a large pot with a tight-fitting lid. The pot should be big enough to hold all the mussels with room for them to open up during cooking.
Add . a minced shallot or garlic clove in olive oil briefly before adding mussels. You can also add a pinch of red pepper flakes, a bay leaf, fresh thyme or parsley. The aromatics will infuse the mussels with flavor. add 1 cup of water
Bring to a boil, then simmer. Bring the pot with mussels and liquid to a rolling boil. Immediately reduce heat, cover, and simmer for 5-8 minutes while shaking the pot occasionally.
